Protein Granola Bars

As mentioned in my earlier post – my darling baby brother was in the search of something healthy pre-workout. And my commitment is to give him quite a few options, so that he can rotate them every week of the month.

This one is a version of a granola bar with whey protein powder, and makes for a softer texture. It is filled with sesame seeds, unsweetened coconut, dried figs, some honey and extra virgin coconut oil. Again, this recipe has no added sugar, flour, or bad fats.

If you use unflavoured protein powder, you could add in some stronger flavours such as cinnamon, or dried strawberries. I used double rich chocolate flavoured protein powder, so I just added sea salt, as the flavour is overpowering enough.

Despite the abundant availability of coconuts in the country, I found it hard to find a good quality extra virgin coconut oil. And then I came upon this wonderful website of Sattvic Foods. They have products and ingredients that will tickle any health freak’s bone! My shopping cart consisted of about 90% of their products. They are the only ones in India to have bee pollen, organic acai berry and maca powder, the best gluten free rolled oats, and some other amazing stuff!

The Recipe
Serves Yields: 8 | Prep Time: 30 mins | Cook Time: 25 mins

Ingredients

  • 1 cup ground oats
  • 1 scoop protein powder
  • ½ cup coconut shreds
  • ¼ cup honey
  • 4 tbsp extra virgin coconut oil
  • ½ cup dried fruits (finely diced) and nuts (dried figs and walnuts)
  • ¼ cup seeds (pumpkin seeds, flax seeds, sunflower seeds and sesame seeds)
  • 1 tsp vanilla
  • 1/2 tsp sea salt

Instructions

  • Whisk the honey, coconut oil and vanilla together.
  • In a separate bowl, stir the oats, salt and protein powder together.
  • Add the oats mixture into the wet mixture and combine well.
  • Stir in the dried fruit, nuts, seeds and coconut.
  • Place the mixture into the lined and greased pan (8by8 inch), pressing down with the back of a measuring cup or large spoon.
  • Bake for 20-25 mins at 170°C in a preheated oven.
  • Allow to cool for 5 minutes in the pan.
  • Then slice the bars within the pan, and remove to cool on a rack.
