The Bread Series

A black-hued bread can be a shocker for some, particularly the old school ones (that means me!). Activated Charcoal, like matcha, has gotten all of us in the food world a bit tizzy – the uses are endless and we’re all trying our best to do something even cooler with it. Swirled into sourdough bread, creates sheer magic, and the flavour is a slight bit nutty, but sweet and paired with the below toppings, a very easy eat!

Tartines are a lot of fun to play with because the topping options are endless. Now what is a tartine you ask, and why not call it a sandwich or crostini? They are slices of baguette with spreadable toppings. A crostini is always a toasted or fried slice of bread and said closer to the Italian side, whilst the tartine is a fancy French open sandwich. But other than that, there’s really not much else and I prefer to say tartine simply because it sounds a lot fancier!

Today I play with a lot of colour and freshness – green avocado slices, bright red cherry tomatoes and delicious fresh oregano!

Toast the two slices lightly on a non-stick pan.
Spread the feta cheese on one slice and top with cherry tomatoes, avocado slices, fresh oregano, salt, pink peppercorns and a drizzle of olive oil.
