Shruti’s Recipe for Soy Patties
I don’t have the time to cook on a daily basis, but love trying on different recipes that is quick, easy and delicious! However I don’t like being in the kitchen for too long so I like a well-stocked pantry and also have a checklist in place before I enter the kitchen (because I don’t like to start cooking without all the ingredients). Being a vegetarian, my husband and I try to keep a check on our protein intake and these soy patties fit perfectly.
These are perfect for someone who likes clean healthy eating and believes healthy food can be tasty as well. A perfect warm protein snack!
Serves/Yields: 6 | Prep Time: 10 mins | Cook Time: 25 mins
Ingredients:
1 ½ cups soy chunks
1 medium onion
5 cloves garlic
1 inch ginger piece
2 tbsp chickpea flour
3 tbsp hot water
1 tbsp garam masala
1 tbsp chilli powder
1 tsp turmeric powder
Salt to taste
Coriander leaves
3 tsp olive oil + more for grilling
To Serve:
Mint + coriander chutney
Method:
Soak the soy chunks for 10 minutes in hot water. Squeeze the water out of the soy chunks and grind until coarse
Grind onion garlic ginger in a blender keep aside
In a pan heat the olive oil.
Sauté the onion-garlic paste until brown, and then add garam masala, chili powder, turmeric and salt and stir to cook.
Add soy chunks to the mixture and combine to coat with the masala.
Stir in chickpea flour, and then the hot water to thicken the mixture into a dough-like consistency.
Cook for 5 more minutes before adding the coriander leaves.
Turn off the stove and let the mixture.
Once the dough has cooled completely, divide the mixture into 6 balls and roll them into patties.
Heat a non-stick pan, coat with a brush of olive oil and grill the patties on both sides for a few minutes.
Serve with mint and coriander chutney.
