Craving a Caesar Salad but worried about the heavy dressing? I’ve got a great alternate that is made with healthy buttermilk, and lovely delicious parmesan cheese with hints of garlic. This dressing has a heavier consistency than a vinaigrette, but lighter than a cream-based one. But it has all the un-compromised tastes of a ranch-type creamy dressing.

I recommend allowing the salad dressing to sit in the fridge for an hour at least to let the flavours infuse.

This salad dressing is ideal for a heavy-lettuce and/or cabbage base salad, a Caesar salad, or even a simple tomato-cucumber and carrot salad.

The Recipe
Serves Serves: ½ cup | Prep Time: 5 mins

Ingredients

  • 4 tbsp yoghurt
  • ¼ cup water, room temperature
  • 1 tbsp lemon juice
  • 2 tsp minced garlic
  • 1 tbsp herbs
  • ½ tsp salt
  • 1 tsp black pepper
  • ¼ cup parmesan cheese, shredded

Instructions

  • Whisk all the yoghurt and water together to make buttermilk
  • Add the remaining ingredients and mix well
  • Refrigerate until ready to use
  • Shake well before adding to the salad
