This is a delicious quick and instant raw papaya salad that has a dressing and topped with a tempering that is filled with deliciousness!
Perfect starter or side to an asian meal!

Ingredients
- 2 raw papayas, thick grated
- ¼ cup toasted peanuts, chopped
- few torn thai basil leaves
- Dressing:
- 3 tbsp soya sauce
- 3 tbsp lemon juice
- 1 1/2 tbsp powdered sugar
- 1 ½ tsp salt
- Tempering:
- 1 tbsp vegetable oil
- 3 tsp mustard seeds
- 2 dry red chili, broken up
- 3 tbsp sesame seeds
- 10-15 curry leaves (kadi patta)
Instructions
- Whisk the dressing together and set aside
- Grate the papaya and toss with the dressing and basil
- Do the tempering on medium heat, starting with oil and mustard seeds with red chili
- Once the mustard seeds sizzle, add the curry leaves and sesame seeds
- Allow the leaves to crisp up and sesame seeds turn red
- Set the tempering aside for a few minutes to cool down
- The pour over the salad and stir well
- Taste for balance of sour, sweet and spice
- Add the toasted peanuts
- Refrigerate until ready to serve
