Zucchini latkes make for regular dinner for me because they are so delicious, easy to make, carb-free and yet keep my stomach full until my bedtime at 1 AM! These are that good. However, they are so simple, I assumed it would not be interesting enough. When I shared this dinner with a friend, she asked why this was not on Kitchen Therapy? So this, my friends, is what I eat for dinner, at least three times a week!
Simple grated zucchini, a beaten egg, lovely shredded cheese, some minced garlic and a heavy dash of hot sauce, pepper and salt. Place the mixture into 2-3 medium pancakes on a hot pan, brushed with olive oil, or make into one big frittata like shape. Cook on medium heat for 5 minutes on each side. Remove from heat and serve with mustard, chilli sauce, ketchup or hung curd (to make like sour cream).

Ingredients
- 1 cup zucchini, grated
- 1 egg, beated
- 1/2 cup shredded cheese
- 1 tsp garlic, minced
- 2 tsp hot sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- mustard, hot sauce, hung curd, Greek yogurt
Instructions
- In a mixing bowl stir together all the ingredients.
- Brush a non-stick pan with olive oil and place on medium heat.
- Pour the mixture into mini pancakes and let cook on each side for 5 minutes.
- Remove from heat and serve with condiments.
