During my college days (over 10 years ago now!) I spent hours in the library just before midterms and exams; and of course, I needed lot’s to munch on. I was quite the strategic mover back in the day – I would spot like-minded fellow eaters who wouldn’t mind my crunching and the rustle of food bags or the lovely scent of my garlic cream cheese bagel sandwich… my priorities were quite clear!
Anyways, it was during one of those days that I discovered what Chex-Mix was – a medley of cereal, pretzels and a gorgeous mix of sweet and salty and just hit the spot while you were forced to scrutinize through your textbooks. Whenever I have stress-induced moments, my mind automatically craves a packet of crunchy munchies like the Chex-Mix.
When I got my hands on this packet of gluten free tortilla chips from AL Chipino, the flavour of BBQ Tikka Masala worked perfectly to recreate this tension-relieving snack! The spices are not too overpowering, but enough to give the right melange of flavour with the other ingredients. I use sweeter dried fruits like cranberries, blueberries, kiwi and mango and salted nuts like almonds and cashews. I also add bagel chips and crunchy breadsticks. This is the beauty of the Chex Mix – you can use just about anything that takes your fancy. As long as you like it, there are no rules!
You can store this in an airtight container for upto 3 weeks.
