Breakfast
Some mornings I arise with an intense sweet craving – most of the times it’s when I’ve had my dinner before 7 pm, which is a common occurrence, and simply because of that, I believe I am entitled to a bit more sugar than usual. Luckily, I had some sourdough on hand to toast up in some lovely butter – a much needed essential. This is the vehicle that you build on with whatever your taste buds need – peanut butter and jam, caramelised bananas with spices, some extra honey for all that extra love!
Simple, easy, made in less than 10 minutes, 5 if you’re quick!

- 2 sourdough slices
- 1 tbsp butter, divided
- 1 tbsp strawberry jam
- 1 tbsp peanut butter
- 1 banana, sliced
- ½ tsp cinnamon
- 2 tsp brown sugar
- pinch of nutmeg
- pinch of clove
- honey
- pistachios
Instructions
- Toast the sourdough slices in a hot pan with half the butter
- Then spread peanut butter and jam onto both slices
- In the same pan, melt the remaining butter and add the bananas, sugar, cinnamon, nutmeg and clove powder and sauté for a few minutes until sugar has melted and the bananas are nicely caramelised
- Place the bananas on top of the toast, drizzle with some honey and sprinkle pistachios on top.
