No churn ice cream is the easiest dessert you will ever make. I've never thought I'd be one to regularly make ice cream at home, but this one is rather good. I had some amaretto with me and decided an ice cream with it was very much in order! I also threw in a lot of roasted almonds and crushed lotus biscuits, a touch of cinnamon and nutmeg and vanilla extract.
The ice cream keeps very well, and this recipe can be multiplied to double for larger crowds
The Recipe
250 g approx
Ingredients
175 g whipping cream
85 g condensed milk
2 tsp vanilla extract
½ cup chopped almonds, toasted
½ cup crumbled digestive biscuit or lotus biscuits
25 ml amaretto
½ tsp cinnamon
Pinch of nutmeg

Instructions
In a bowl, stir together the condensed milk with vanilla extract, cinnamon and nutmeg
In a large bowl, whisk the whipping cream until soft peaks occur
Then slowly whisk in the condensed milk mixture
Then slowly trickle in the amaretto and whisk for a few seconds
Using a spatula, fold in the nuts and digestive biscuits
Pour the mixture into a freezer safe container
Freeze overnight
Remove 10 minutes before serving
