Did you know you can make a delicious soup with all the good stuff in matter of 5 minutes, by simply putting every ingredient together into a blender, followed by chilling in the fridge, just in time to serve? I know, I’m bordering on ‘how ludicrous!’ but I assure you I am not lying! Give this one a shot and thank me later!
The Recipe

Ingredients
80 g zucchini, chopped
½ lemon, juice
1 tsp miso paste (shiro miso or white miso)
8 g cashews, soaked in water for an hour and drained
6-8 leaves of basil
1 clove garlic
1 tsp salt
1 tsp black pepper
¼ - ½ cup vegetable stock
Garnish:
roasted chickpeas
fresh basil
½ lemon, juice
1 tsp miso paste (shiro miso or white miso)
8 g cashews, soaked in water for an hour and drained
6-8 leaves of basil

Garnish:
roasted chickpeas
fresh basil
Instructions
Place all the ingredients together and blitz until smooth, adjust salt levels and vegetable stock for thinness of the soup
Serve chilled with garnish of toasted chickpeas
