This recipe is not mine – not even by 5%! This recipe is by my Little Vini, who makes the most scrumptious foods and meals that usually ends in having to unbutton our pants – it’s with good reason that none of us in the house have 6-pack abs!
So the lemon tart has many interpretations and twists – a jelly like filling, a lemon curd, a cheesecake inspired creamy one and then there is this: a light creamy and zesty filling made with paneer. The filling is so good; it could easily be passed off as ricotta. The paneer ensures the airiness and helps you towards a generous second helping.
I also added a layer of dark chocolate to the crust for an added flavour. I had some interesting Lindt dark chocolate with lime flavouring, which went perfectly with the flavour profile. You can use regular dark chocolate instead.

1 cup shredded paneer
100 ml cream
1/4 cup castor sugar
2 tsp lemon zest
1/2 tsp lemon extract
1/2 tsp vanilla extract
50g Lindt Dark Chocolate Lime Intense

Follow instructions as per recipe of Bakewell Tarts
Melt the chocolate in a double boiler or microwave for 1½ - 2 minutes.
Spread a reasonable amount of chocolate on the base of the tarts. Refrigerate them for 10 minutes to harden the chocolate.
Whisk all the ingredients together until well combined.
Scoop out the filling into the tarts and refrigerate until ready to eat.
